Wine-based drink flavored with visciola

From an ancient 19th-century recipe, visciola wine is today produced in extremely limited quantities, exclusively in its area of origin in the Marche region, within a small number of hilltop municipalities between the provinces of Ancona and Pesaro. A true traditional drink of Marche, it has been officially recognized by the Marche Region as a P.A.T., that is, a “heritage product to be safeguarded“.

The visciola cherries (from the Latin Prunus cerasus) grown in our orchard are a variety of sour cherry with a sweet-and-tart flavor, characterized by an intense, fruity aroma, a thin, bright ruby-red skin, and a very juicy, soft flesh. The result is an elegant, harmonious, intense, and persistent wine, with clearly perceptible visciola notes. It pairs well with dry pastries and traditional desserts from the Marche region, and is excellent with dark chocolate.

The visciola orchard extends over an area of approximately 2.5 hectares and is located in the municipality of Staffolo, in the province of Ancona, in the heart of the Marche region. Situated at an altitude of 442 meters above sea level, it occupies one of the picturesque hills overlooking the Vallesina valley, an area well known for its agricultural tradition and scenic landscape.

The exposure is particularly favorable: the land benefits from continuous sunlight from sunrise to sunset, an ideal condition for the balanced development of the plants and the optimal ripening of the fruit. In addition, the well-drained nature of the soil prevents water stagnation, helping to maintain a healthy environment and supporting the vigorous, productive growth of the visciola cherry trees.

These pedoclimatic characteristics, combined with its privileged location, make the orchard an ideal setting for producing high-quality crops, in full respect of the distinctive features of the Marche region.
